Summer Greetings from Chef Jacques and Paul
 
In mid-September, I’m leading a group of foodies and wine enthusiasts on a ten-night Rhône River cruise with Tauk River Cruising. The itinerary is packed with cooking lessons, wine tastings, and delicious meals. Tauk just opened up three more cabins to our ever-growing group, so there are now a few spaces available for those interested in joining this culinary adventure. I’ve just put the finishing touches on the menu for a special dinner I’m hosting in Paris the night before we depart on the cruise. The tomatoes in the garden are ripening as fast as we can use them. All of the tomatoes in our tomato salads are coming directly from the garden and we never harvest the tomatoes more than a few hours before they arrive on your table. I’ve been asked by several diners about my secret for growing such vigorous plants. Here are two tips: First, mix your coffee grounds into the soil. The coffee grounds add minerals and acidity to the soil, which tomatoes love, and the grounds attract beneficial earth worms to aerate the soil and create nutritious compost. Second, when you first put your seedlings into the ground, put ½ teaspoon of Epsom salts around the base of the plant. The salts also add minerals and discourage fungal growth. We have a lot of the booming tomato plants, as well as a video explaining how to make our simple but ever popular tomato salad. A fresh, vine-ripened tomato and a good vinaigrette are key to making a good tomato salad.

In August we’re hosting the next installments of our popular Musique et Cuisine and Garden to Table dinner series, in addition to a wine dinner and cooking demonstration hosted by me. Januik Wine Dinner
 
Please join us for a Januik Wine Dinner on Wednesday, August 12th at 6:30pm as Andrew Januik introduces the wines of his family’s winery, as well as his own Stone Cairn Cabernet. Andrew’s father Mike Januik has been working with wine in Columbia Valley since 1984, including 10 years at Chateau Ste. Michelle where he established the winery’s reserve and single vineyard program. Mike left to found Januik Winery in 1999, and his relationship with the state’s top growers has served Januik well: “Nobody in Washington State delivers more outstanding quality for the dollar” (Wine Advocate). Andrew has been working in the business since his teens, and seems bound to make an impact in his turn.

Musique et Cuisine featuring Alex Barnett, Classical Guitarist
 
Join us for the Musique et Cuisine Series featuring Alex Barnett, Classical Guitarist on Friday, August 14th at 7pm. Back by popular demand for the Musique et Cuisine Series on Friday, August 14th, classical guitarist, Alex Barnett. Alex will entertain and delight us with classical music, mixed with a little jazz, flamenco and bluegrass style influences. The evening is topped off with Chef Jacques’ six-course menu, including your choice of appetizers, salads and entrée items, and mais oui, but of course, specially paired wines by our sommelier! Bon Appétit!

Team Member of the Month
 
Thami “Tommy” Fadissi started working for us in  August 2000. Tommy is celebrating fifteen years as a valued team this month. Tommy is one of our most hard working  and most requested waiters. We can always count on him to take the lead at lunch, as well as the many special events. We hear he even has his own Tommy fan club! Are you a member? Congratulations, Tommy, and thanks for all of your enthusiasm and dedication!

Great Falls Bounty Garden to Table Dinner
 
We hope you will join us for the Great Falls Bounty Garden to Table on Tuesday August 18th at 6:30pm. We will celebrate the August bounty of garden fresh vegetables and herbs from L’Auberge Chez François’ two on-site gardens. Chef Jacques and the team have created a six-course dinner that is paired with three fine wines, all while outside dining under the stars. Garden to plate at its best!

“Papa Haeringer’s Favorites” Cooking Demonstration and Luncheon
 
Please join us for Papa Haeringer’s Favorites Cooking Demonstration and Luncheon on Saturday, August 29th at 11am. The day will feature Chef Jacques’ special cooking demonstration and luncheon that includes Papa Francois’ favorite dishes. Following the entertainment, you will enjoy a five-course luncheon paired specially selected by Paul Haeringer with wines that Papa loved.
