A Very Special Domaine Carneros Wine Dinner With Carneros Winemaker TJ Evans
Wednesday, May 8th at 7:00pm

Please join Chef Jacques and Team on Wednesday, May 8th, 2019 at 7pm for a very special evening with Pinot Noir Winemaker TJ Evans of Domaine Carneros. Domaine Carneros specializes in great, handcrafted pinot noirs and elegant sparkling wines.

Prior to joining Domaine Carneros in 2008, TJ Evans spent 10 years in a variety of winemaking positions around the world, during which he developed not only winemaking knowledge, but a deep love of Pinot Noir and the decision to make it the focus of his professional life.  TJ worked harvest at New Zealand’s Villa Maria Estate, apprenticed at France’s 500 year-old Domaine Jean-Louis Chave and served internships with Mondavi Winery and Far Ninete.

Our special evening begins at 7:00p (weather permitting) on our beautiful “in-bloom” terrace with Chef’s seasonal canapés paired with chilled Domaine Carneros, Brut Vintage Cuvée.  Feast on Chef Jacques’ five-course dinner featuring the delectable sparkling and Pinot Noir wines of the Grand-Dame, Domaine Carneros.

Brut Vintage Cuvée, 2014

Signature wine of Domaine Carneros. It encompasses the widest range of estate clones and vineyard blocks of the winery’s collection. The tapestry of flavors that result, married with the inherent finesse of the cool Carneros fruit, create wines of depth and complexity that are enhanced by a minimum of three years of bottle age sur lie in the cellar before release.

Brut Rosé Cuvée de la Pompadour

More than 250 years ago, Louis XV’s great paramour, Madame de la Pompadour, famously introduced sparkling wine to the court at Versailles. She declared it “the only wine that a woman can drink and remain beautiful,” and today Domaine Carneros’ Pompadour Brut Rosé is named in her honor. Domaine Carneros harvests estate-grown, green certified Pinot Noir and Chardonnay grapes from its vineyards in Carneros to craft small quantities of this beautifully balanced Brut Rosé.

Estate Pinot Noir, 2016

The grapes for the Estate Pinot Noir are chosen from up to 12 clonal selections in the winery’s five green certified estate vineyards in Carneros. After an early-morning harvest, while the grapes are still cool, the handpicked fruit is gently destemmed and cold soaked. Fermentation takes place in small, open-topped vats with punch-downs, resulting in heightened color and complex flavors.
