Celebrating 60 Years

Continuing our 60th Anniversary celebration, I am hosting a very special Fall Harvest Garden to Table Extravaganza on Monday, October 13 at 6:30 PM.  Due to the overwhelming responses and comments from our diners, I plan to bring the series back in the Spring as soon as our gardens bloom! I am still harvesting plenty of kale, lettuces, greens, haricots verts, cabbages, herbs and other produce from the garden. The Garden to Table Dinner is a special chance for me to create a full menu featuring the very fresh items that come from our gardens while enjoying all the added healthful benefits. You’ll find our garden produce proudly featured on our lunch and dinner menus at L’Auberge Chez François and Jacques’ Brasserie. 

Our new Fall Cocktail Menu has been introduced!  The cocktails include bourbons, cognac, elderflower, our garden herbs, quince, apples and other delightful ingredients to usher in the Fall season. We have, as well, created three seasonal alcohol-free libations. Don’t forget our very own firepit and seating area on the Brasserie terrace is a great way to sample these delectable drinks! 

We are always happy to accommodate the special dietary needs of our customers, so please speak with your server or the receptionist when you make your reservation and we’ll be happy to prepare a meal to your specifications. Due to our patrons request, diners at the restaurant will find all gluten free menu items noted with the initials – 

GF.  

Remember, the holiday season is soon upon us and it’s never too early to plan for all your holiday parties, happy hours, dinners and special events at L’Auberge Chez François.

Fall Harvest Garden to Table 
 
Continuing our 60th Anniversary celebration, L’Auberge Chez François is hosting a very special Fall Harvest Garden to Table Extravaganza on Monday, October 13 at
6:30 PM. Chef Jacques has created a seasonal five-course menu showcasing organic produce from our gardens, with one of Papa’s favorite entrées, Lobster Soufflé. Each course will be paired with wines from our good friends at Louis Latour. Meet and talk with Michel Véniat from Maison Louis Latour throughout the evening. The Fall Harvest Garden to Table will take place on our beautiful outdoor terrace with live soulful jazz sounds while dining under the stars.

Mary Ann Redmond 
 
For your musical entertainment, we are delighted to have the Mary Ann Redmond Duo perform at our Fall Harvest Garden to Table Extravaganza on Monday, October 13. Mary Ann is known for her soulful and wide-ranging vocal style in popular and jazz music. She has won 23 Washington Area Music Awards (Wammies) for Blues/Traditional R&B Female Vocalist. As singer, songwriter, Mary Ann is described as “an exciting vocal talent” by Billboard Magazine. Her distinctive voice, tinges her jazz with potent amounts of blues, folk and soul. It’s a powerful combination! Join us for what promises to be an extraordinary evening.

On Friday, October 24, indulge your love of classical music and fine dining! Dine at L’Auberge Chez François, and then join us at The Barns at Wolf Wrap with Cardiff Singer of the World, Jamie Barton. Jamie will preform songs that won her that coveted title and concludes with a portrayal of Julia Child in Hoilby’s chamber opera Bon Appétit. Chef Jacques will join Jamie as part of the evening’s Q&A recounting his family’s culinary history, and relationship with the grand dame of French cuisine. Quintessa Wine Dinner
 
Please join us on Wednesday, October 22 at 6:30 PM for a tasting of unique wines from the Quintessa Family Estates hosted by Master Sommelier Larry Stone. Quintessa Estates Winery in Rutherford, CA includes a valley, a lake, five hills, four microclimates and many soil types producing 40 very different wine lots from 26 different vineyard blocks. The property’s diversity contributes to the high quality and uniqueness of the fruit. Chef Jacques’ featured entrée, Roasted Veal Loin Chop with Mixed Wild Mushrooms and his specially created five-course menu will compliment all the evening’s wine selections.

2015 Rhône River Cruise
 
The MS Swiss Emerald is almost filled to capacity! Please join us, there are a few cabins left to come aboard Chef Jacques’ River Cruise through Provence’s Rhône River Valley. Tauck’s A Taste of France seven-night cruise begins September 22, 2015. Chef Jacques will lend his expertise on French cuisine, wines and culture. Recipe of the Month
 
A Lobster Soufflé with Herb Beurre Blanc will be the featured entrée at our Fall Harvest Garden to Table Event. In classic French tradition, and a favorite of Papa Haeringer, the golden puff of a lighter than air mousse and the sweet buttery richness of lobster meat, the Lobster Soufflé is sure to please and is excellent when paired with a Louis Latour, Chassagne Montrachet 2010. Few may find making a soufflé daunting, but give it a try, you’ll be surprised by the results.

Wine of the Month
 
Our wine of the month is Louis Latour, Chassange Montrachet 2010, pale yellow in color with complex aromas of toasted almonds, peach and honey. This wine is full in the mouth, harmonious, yet powerful with vanilla and light peppery notes. The wine’s full body and refreshing acidity together make it a fine accompaniment to our Lobster Soufflé with Herb Beurre Blanc. The winery at Maison Louis Latour in the pretty medieval village of Aloxe-Corton, dates back to 1832, and was the first purpose-built winery in France and is one of the oldest still functioning today.

To Your Health
 
I recommend the use of evaporated cane juice instead of white sugar. Evaporated cane juice is the whole dried sap of the sugar cane and contains many nutrients lost in regular sugar. This product is now more readily available and is used one-for-one in place of white sugar. Evaporated cane juice adds little flavor, only sweetness. Other sweeteners, such as honey or maple syrup, are also recommended, however impart distinctive flavors often enhancing but decidedly altering the finished product.
