| We’re already getting ready for the holidays at the restaurant, which means that our popular Pumpkin Mousse Cake is now back on the dessert menu at L’Auberge Chez François and at Jacques’ Brasserie at L’Auberge. You’ll find the recipe for the Pumpkin Mousse Cake below, but of course I recommend that you leave the cooking to me and have a slice right here at L’Auberge Chez François along with a glass of 2011 Domaine des Bernardins Muscat de Beaumes de Venise, our featured wine of the month. With its spicy and lightly sweet flavor, this Muscat pairs perfectly with pumpkin mousse to make for a delicious finish to your meal. |

Autumn Greetings!
Today I harvested an entire row of Speckled Trout lettuce from our garden, and I’ll be serving it in the green salads at L’Auberge Chez François and Jacques’ Brasserie at L’Auberge tonight. Speckled Trout is a delicious heirloom lettuce, similar to romaine, that I’m told was grown in the gardens of Monticello during Thomas Jefferson’s life.
With the help of my kitchen staff, I also harvested a bushel of green beans that will serve as a vegetable side dish on many of tonight’s main courses at L’Auberge Chez François and at Jacques’ Brasserie at L’Auberge. Happy Fourth of July to all. I’m happy to report that two of my favorite ladies, Kathie Lee and Hoda, have asked me for another date. I’ll be on the fourth hour of the Today Show on Tuesday, July 16th, airing 10:00am. ![]() This time Kathie Lee and Hoda have asked me to show them how to make a Parisian style meal to eat outdoors in the summer. Did I mention that the meal must take fifteen minutes or less to prepare and that all ingredients must be budget friendly? These two are tough customers, but I have an excellent menu in store for them that includes a Jacques’ Brasserie favorite: mussels in herb and garlic butter. |
