Celebrating 60 Years
 
Greetings from Chef Jacques and Paul
 
We are getting ready for the holidays, our busiest time of year at L’Auberge Chez François and Jacques’ Brasserie. I’m always happy to see so many of our loyal customers celebrate the holidays with us. I want to thank all of you who make us part of your holiday traditions year after year. As is our tradition, we will turn on our holiday lights at L’Auberge on Thanksgiving. Great Falls practically experiences a brownout when the lights are switched on.   

The arrival of Fall means that our Pumpkin Mousse Cake is back on the menu along with our game dish, Red Deer Chop, Grilled Quail, and Wild Rice served with Roebuck Sauce. And, those of you joining us on Thanksgiving will be treated to a five course dinner menu with options that include our Ashleigh Farms organic turkey dinner with all the traditional trimmings.

Franciscan Estate Wine Dinner
 
Please join us on Thursday, November 13 at 6:30PM for a pairing of excellent wines from the Franciscan Estate Winery, located in the Oakville region of Napa Valley. Franciscan Estate is dedicated to exploring, developing and mastering artisanal techniques to create the perfect glass of wine in every vintage.
Chef Jacques’ featured entrée, Herb Crusted Filet Mignon with Scalloped Potatoes and his specially created five-course menu will compliment the evening’s wine selections.

Holiday Wine Festival Luncheon
 
Our Holiday Wine Festival Luncheon will take place on Saturday, November 22. Please join us as we sample wines from France, Italy, Oregon, California, and Washington State. A walk-around tasting of twelve wines with hors d’oeuvres will be from 11:30 – 1:00PM. Following the tasting, sit down and enjoy a complete luncheon of your choice from our four-course Luncheon Menu. All wines sampled at the tasting will be available for purchase at a special discount.

Fond Memories of Julia
 
Jamie Barton’s portrayal of Julia Child in the chamber opera, Bon Appétit at the Barns, adapted an episode of Julia Child’s television show The French Chef. Jamie actually prepared a chocolate cake while performing the one-act, one-women opera. Chef Jacques later provided chocolate truffles for the audience and shared stories of his families’ friendship with Julia Child. Julia was a frequent guest at L’Auberge Chez François and a good friend of Papa Haeringer. Chef Jacques shared his memories of being along side Julia Child at a National Press Club book signing promoting each of their cookbooks. It was there Julia encouraged Jacques to teach his love of French cooking to America via a PBS television series. Inspired, Chef Jacques’ Two for Tonight television series was born and aired in 167 markets.

Rhône Valley Wine Dinner
 
At press time our Rhône Valley Wine Dinner on Wednesday, November 5 has sold out. Our sommelier-curated wine dinners have become very popular with wines selected by our Sommelier Alex Bardsley AIWS, and paired with Chef Jacques’ five-course dinner menu. The featured French wines demonstrate how the differences of climate, topography and grape variety between the Northern and Southern Rhône Valley are expressed in the glass. To Your Health
 
As we harvest the last of this season’s vegetables from our organic gardens, during the winter months, I utilize suppliers of organically grown produce of fruits, grains and vegetables grown without synthetic fertilizers, chemicals or pesticides as well as free-range cattle and poultry raised without the use of hormones, antibiotics or growth stimulants. Chef’s Collaborative promotes the use of organic products of highest quality, and have set up a professional chef’s resource network for these products. Seafood in Saffron Sauce
 
Our Recipe of the Month is Seafood in Saffron Sauce served in light, flaky puff pastry shells, an impressive and enticingly easy dish to prepare as a first course or entrée.  It’s a delicious combination of seafood ingredients cooked in an aromatic sauce using a touch of saffron to add a sunny color and delicate taste. Enjoy this recipe paired with a 2010 Domaine des Sénéchaux Châteauneuf-du-Pape Blanc, our November Wine of the Month.

Wine of the Month
 
Our Wine of the Month, the 2010 Domaine des Sénéchaux Châteauneuf-du-Pape Blanc offers an enchanting nose of orchard blossom, fruit and spice. On the palate it is opulent, showing apple, pear and almond, finishing with a refreshing hint of bitterness to cleanse the palate. The wine is made up of roughly one third each Roussanne, Grenache Blanc, and Clairette, with a splash of Bourboulenc, and only the Roussanne sees any time in oak. It pairs delightfully with our recipe for Seafood in Saffron Sauce.

Please join us for your holiday celebrations, family gatherings and private parties. Let our kitchen do the preparations, and reserve your table for Thanksgiving featuring Ashleigh Farms turkey in addition to our five-course menu selections. Join us on Christmas Eve, enjoy holiday carolers, roast goose with all the trimmings, and options from our five-course dinner menu. Chef Jacques’ New Years Eve Gala is always a special night of dining, music, dancing, balloon drop and champagne toasts at midnight to ring in the New Year.

Mark your calendars, and save two dates in December for Chef Jacques’ Holiday Cooking Demonstrations, each demonstration will be followed by a specially created five-course luncheon menu. On Friday, December 5, Chef Jacques transports you to A Holiday in Paris and on Saturday, December 13, what could be more enjoyable than his Champagne Celebration.
