Cooking Demonstrations & Wine Dinners

Chef Jacques Cooking DemoJoin Chef Jacques Haeringer at the award-winning L’Auberge Chez François for one of our lively and entertaining cooking demonstrations combined with a delightful meal.  At each event, Jacques will share his passion for classic and contemporary French cuisine by teaching expert cooking techniques and tricks of the trade, and sharing these recipes for the home chef, while guests sip specially chosen wine. 

After the demo, our guests will then enjoy their “just demonstrated” five-course luncheon in our garden room, paired with wines selected by our sommelier.  Patrons will have the opportunity to purchase these wines at a special “trade” price. Bon Appetit, merci beaucoup et à bientôt.

At L'Auberge Chez François, the marriage of French and American gustatory experience is central to what we do, so we are pleased to host a wine dinner that reflects a similar cultural meeting. Bruce and Barbara Neyers produce some of the most appealing wine in California, with a French sense of balance and place. This is understandable, since Bruce has served as national sales manager for legendary importer Kermit Lynch for over twenty years, and Barbara worked as chef and manager at Chez Panisse for a similar period. Please join us as Bruce comes to Great Falls to present some of their finest offerings, including a chardonnay that is rich yet fresh, without oak; a lively Rhône-style blend showing juicy red fruit and herbs; a zinfandel that delivers fully-ripe fruit without high alcohol; a silky, aromatic merlot; and a pure, dense cabernet sauvignon with a whiff of cigar-box that recalls Bordeaux.  We are thrilled to welcome both Bruce and Barbara for this very special dinner.

Please join Chef Jacques for our first in a series of “L’Auberge Chez François Goes to the Virginia Wine County” excursions. “Mais oui”, but of course, life is good, sipping and tasting some of the great wines these Virginia vineyards have to offer with Chef Jacques and Victoria on a summer day! 

Our day begins at 9:30am where we will gather at “The Chez” for coffee and croissants.  We then board our private luxury motor coach (leaving promptly at 10am) to experience a fun-filled tour of our selected local Virginia vineyards.  Our wine expert Victoria, will provide industry insights into these vineyards and their wines.  We will also view “Two for Tonight”, Jacques' award winning lively PBS cooking series, along the route to the vineyards.

Our first stop is Zephaniah Farms Vineyard, family of farmers established in Loudoun County since 1950, growing grapes and making wine.  They are well known for their spectacular location and award winning wines.  Our wine tasting will paired with our special Chef-chosen artisan cheese and fruit platter. 

The second stop will be 8 Chains North Winery, a small family-owned and operated farm winery located in the beautiful town of Waterford.  Local award winning chocolatier, Abby Rose Confections, will create artisan truffles, paired with wines especially chosen for our group by the winemaker at 8 Chains. 

We then return to L’Auberge Chez François at 3pm to round out our lovely afternoon in the Virginia Wine Country with a 4 course luncheon of Chef Jacques’ favorites.

Please join us Thursday, August 11th at 6:30pm, as L’Auberge Chez François welcomes Chris Pearmund, Owner and Executive Winemaker at Pearmund Cellars in Fauquier County. Chris is one of the leading winemakers in Northern Virginia, consulting and making wine at numerous wineries around the commonwealth and several other states, as well as Pearmund. First planted in 1976, the former Meriweather Vineyards property was purchased in 1993, and boasts fifteen acres under vine, as well as a geothermal winery. Grapes are sourced from a number of other sites in Virginia, allowing Pearmund to produce a few thousand cases a year of fine, artisanal wine from a number of grape varieties.

Join us in our continuing exciting Musique et Cuisine series featuring the very talented Jeff Severson, who will entertain us with his fingerstyle guitar.  Jeff has quite a history of musical greatness, including being inducted into the Kansas Music Hall of Fame 2009 and South Dakota R&R Hall of Fame 2015.  He also has appeared as guest soloist with the band America at the Birchmere, Alexandria and opened for Nils Lofgren/Skunk Baxter at the Hard Rock Café Washington.  Jeff has recorded 11 CDs of mostly original fingerstyle guitar compositions and been nominated for Producer of the Year by WAMA, Washington Area Music Awards.  Come out and join us for a wonderful evening of music and L’Auberge Chez François cuisine and sommelier wine pairings-not to be missed!

On Saturday, August 27th at 11a, please join us for a very special Garden to Table “August Bounty” Cooking Demonstration and Luncheon.   L’Auberge Chez Francois, Chef Jacques, and lead Gardner, Stephanie are very proud of our two on-site gardens, and are happy to suggest nutritionally superior food to make for delightful cuisine for this special afternoon’s demo and luncheon and on all of our daily offerings.  

To begin, we will feature Chef Jacques’ own Specialty Cocktail, made from our own garden fresh herbs, to sip, while we watch Chef Jacques and his lively cooking demo.  This ever-so-fresh cooking demo and luncheon commences with Papa Haeringer’s Classic Vichyssoise, a Summer Garden Salad, Roasted Red Pepper Sorbet, Diver Scallops Provençal with our garlic herb butter with our garden herbs.  Each course thoughtfully paired with our sommelier chosen fine wines.
