August 2018 Newsletter

Summer Greetings from Chef Jacques and Paul:
Summer and the gardens at L’Auberge Chez François are in full bloom.

Despite a rainy summer, the expanded gardens are producing bumper crops: haricots verts; several varieties of peppers including shishito, marconi and big bell; summer squash, orange
and green zucchini; several varieties of heirloom and red beefsteak tomatoes (served
in our popular tomato salads and delectable Fresh Garden Bloody Marys). Our climbing cucumbers are also plentiful.Green and purple basil, tarragon, chives, mint, sorrel, sage, lemon verbena and shiso round out the herb section.  All vegetables and herbs are harvested and served the same day.

New this year, we are growing two varieties of hops for an October brew, in
collaboration with our friends at Lost Rhino Brewing Company.

We will begin planting fall crops including kale, kohlrabi, rutabagas, cabbage, spinach
and several types of fall lettuces in the coming weeks.

Continuing a full slate of special events here at L’Auberge Chez François, look forward to
the next installments of the popular musical garden brunches, wine festival and
full moon garden dinner (be ready to howl). Additionally, L’Auberge Chez François will be hosting an Italian wine dinner as well as a Grand Burgundy wine tasting dinner.

Enjoy the rest of your summer and hope to see you soon!

Until next month,

Chef Jacques, Paul Haeringer, and the L’Auberge Chez François team

L’Auberge Chez François goes Italian: “A Taste of Italy” Wine Dinner
Please join us Thursday, September 13th, 2018 at 7:00 PM for a special wine dinner show casing the wines of Elvio Tintero from The Piemonte. In 1900 a Frenchman named Pierre Tintero set out for Piedmont. Pierre, called “Pietrin” by the locals, quickly became a vital part of the estate and fell in love with the widow, whom he married two years later. The couple continued to work the vines
together and bottled their own Dolcetto for the first time just as war fell in 1914. It was not until the 1980’s that Pierre’s grandson Elvio began experimenting with the challenging process of frizzante wine production. Now, in addition to more serious, traditional wines like Barbaresco and Arneis, the Tinteros make delightful, fresh, slightly spritzy wines from local grape varietals
that are a joy to drink. Elizabeth Van Wazer CSW of The Robins Cellars will be
on hand to present the wines, and Chef Jacques has designed a menu to showcase
both styles.

Grand Burgundy Wine Tasting and Dinner
Please join us Wednesday, September 26th, 2018 at 7:00 PM for a guided wine tasting and dinner featuring the wines of Burgundy. Fresh from a study trip to the region this past June, our head sommelier Alex Bardsley will present tastings of two flights of red Burgundies. The first flight will
feature three Premier Cru Volnays from the Côte de Beaune by Domaine Nicolas
Rossignol, from three different vintages. The second flight will showcase three wines from Nuits-Saint-Georges in the Côte de Nuits, by three different producers. Dinner will be accompanied by white and red wines from the village of Marsannay, at the northern tip of the Côtes de Nuits. Altogether, the event
will highlight both the significant differences in style between two villages such as Volnay and Nuits, which are only about fifteen miles apart, and the subtler differences between vintages and producers, that make the wines of Burgundy so fascinating.
