Greetings from Chef Jacques and Paul

Spring is finally here!  The L’Auberge Chez François and Jacques’ Brasserie team and moi  are looking forward to alfresco dining, sipping chilled beverages in our wine and beer garden, and enjoying the bounty of our two on-site organic gardens.

I have been happily leafing through the various organic seed catalogs, (remember the old Sears and Roebucks Holiday catalogue?) calculating how much to purchase to ensure a bountiful harvest for our guests. I have several varieties of heirloom tomatoes, green beans, French radishes, spinach, sorrel, squash and the list continues!  We also have six types of lettuces to combine into a special green salad that we will be serving in the spring.  Even with the ground still partially frozen, we’re conditioning the soil with organic compost and coffee grounds in anticipation of spring planting.  I can’t wait to get my hands “dirty”, with our lead gardener, Stephanie, again in the gardens!

We are thrilled to offer you in the month of April a wide variety of Culinary Experiences and Special Events for you and yours to enjoy at L’Auberge Chez François.  From Motown music and cuisine, everyone’s favorite musical brunches, Chef Jacques’ Table with delectable wines and visiting winemakers, a Broadway ‘music and cuisine’ performance, cooking demos and luncheons and a Spring wine festival and luncheon, next month is indeed one of our most action-packed months of the year! Vive le Printemps !

Looking forward to seeing you during this wondrous season, in our little slice of French Countryside in Great Falls.

Cheers!

Chef Jacques, Paul Haeringer and the team from L’Auberge Chez François and Jacques’ Brasserie

Team Member of the Month

This month we honor Salvador Hernandez, who joined L’Auberge Chez François in October 2015. Salvador can be seen assisting our guests, whether outside directing car parking, or in the main dining room bringing our bread selections to the tables, refilling waters and helping clear settings.  Salvador also helps deliver seamless service to diners at Jacques’ Brasserie, running food from the kitchen down to the Brasserie. We can always count on Salvador to help his coworkers, and on his flexibility in getting the “job” done right.  We want to thank Salvador for doing such a great job and for all his hard work.
