Greetings from Chef Jacques and Paul:

Happy holidays from all of us at L’Auberge Chez François and Jacques’ Brasserie. 

As we kick into high gear for our busiest season of the year, I am so thankful to have such an excellent team, whose hard work and dedication have allowed us to be a Washington-area institution for sixty five years.

Many of our regular guests request a favorite server when they come in for lunch or dinner and we’re always happy to oblige.  But our guests only ever meet a fraction of the people who keep everything running in perfect time during their meals. We have over eighty-five employees, many of whom are hard at work in the back of the house. 

Behind the copper doors that lead to la cuisine, an ensemble of pot washers, line cooks, chefs, and pastry chefs staff stations around our large kitchen to ensure that the French fries at the Brasserie are pleasingly crispy and the lobster upstairs is sauced just right.

Guests may view the goings on in the kitchen through a window adjacent to the main entrance of L’Auberge. If you’d like a closer look, please feel free to ask your server for a tour of the kitchen.

And, of course, we have many loyal guests who have been dining with us for just as long. Cheers, thanks and “merci beaucoup” to all of you for your patronage throughout the years and in 2019 and we hope to see you here during the holidays and in the New Year. 

2020 promises a tres exciting and ever expanding line up of all our special events.  We will continue to offer lively and delectable soirées showcasing fine food, wine, craft beer, live music and our two on site-gardens (in season).  From our lively Chef Jacques’ cooking demonstrations and luncheons, to our “howling at the full moon” parties and more, be sure to join us throughout the year.  Don’t forget, we are continuing to expand our wildly popular culinary travel and cruise business with Tauck, an award winning family-owned travel company.  Think Portugal, Tuscany, South of France and more, with me, as your culinary host!

A Chef’s Christmas Poem
T’was the night before Christmas, and all through the kitchen
Chefs scurried about while groaning and bitchin’.
The sauces were simmering and seasoned with care,
Because soon the reveling hordes all would be there.
The tables were set, and not a moment too soon;
Both waiters and hosts looked ready to swoon.
Will we ever be ready? It’s so hard to tell;
Our chances are as good as a snowball in hell.
The pressure was on. The geese were a-roasting,
As partiers began all their holiday toasting.
With bags full of presents, dressed in festive apparel.
Our guests made such a racket that drowned out the carols.
In the kitchen waiters shouted, while cooks swore through their teeth.
The scene was pure bedlam, not a moment of peace.
The chef, he bellowed, to the cooks on the line,
“Move your derrières, make those plates look sublime.
”“I want everything hot, let us make haste,
Move onward you cooks, there’s no time to waste.
”The chef looked about, then said with a shrug,
“To all a good supper and a hearty bah humbug!”

A New Year’s Musical Brunch Featuring the Music of Tim Wynne and Scott Butler

Join us on Sunday, January 5, 2020 at 11:00 AM for a fun filled 2020 New Year’s kick off Sunday brunch, featuring the “Tunematics Duo” playing favorite songs from the 50’s through the 90’s. Join the lead singing band leaders, Scott Butler and Tim Wynne for a “nearly unplugged” presentation of some of the great classic rock hits.This unique group is a combined powerhouse of two lead vocalist bandleaders, Scott and Tim, each from their own well established local band. Their friendship brought them together to enjoy playing the songs they love, and their performances have drawn accolades for their engaging delivery of good songs for good times! Join us as we serve up some 2020 New Year’s Rock and Roll Brunch!

Winter in Alsace Cooking Demonstration and Luncheon

Please join us on Saturday, January 25, 2020 at 11:00 AM for a very special afternoon featuring favorites from Papa Haeringer’s beloved Alsace. Sip on an Alsatian favorite, Lucien Albrecht Crémant d’Alsace, during Chef Jacques’ cooking demonstration. The Alsatian feast entrée has been on our menu for over sixty-four years, and includes sauerkraut, sausages, pork, duck confit and foie gras. For a lighter version, try the The dessert, brought to America by Papa Haeringer from Alsace, Grandmama’s Favorite Kougelhopf en Neige, is a light and fluffy baked meringue with vanilla sauce. The five-course luncheon is paired with three fine wines from Alsace, where minerality and freshness aren’t just concepts, they are the story of the wines.

Team member of the Month

This month we honor Adalberto Osegueda as employee of the month. He joined L’Auberge Chez François in November of 2015 as a night time dishwasher. Adalberto is one of our friendliest employees, he shows up to work everyday with a smile on his face ready to work. Besides his primary job as a dishwasher Adalberto helps with some of the prep such as peeling vegetables. Adalberto’s kind and respectful qualities make him an enjoyable member our our team. Thank you Adalberto for all the hard work that you do! Keep up the great work.

Greetings from Chef Jacques and Paul
We are très excited for the fall season and the upcoming November and December holidays here at L’Auberge Chez Franҫois – a magical time of the year, indeed!   

As the weather transitions to chilly temperatures, our three fireplaces will be roaring inside to keep you warm, and the firewood will be stocked for Jacques’ Brasserie firepit – a perfect spot to enjoy mulled wine or hot cider and good cheer.    

We are proud to share with you a full lineup of exciting November events, including two musical brunches, a Michael Shaps wine dinner, a delectable chocolate and wine festival, our holiday wine fest and luncheon, and for the first time – a “Hats off to Beaujolais” dinner.  Also, Chef Jacques’ will be presenting his classic Thanksgiving holiday cooking demo and luncheon, with a special emphasis on sauce preparations and roasting techniques.  Last but not least, a holiday Rock and Roll supper with “The Tunematics”, and moi, banging on the drums!   So many November events for everyone to enjoy!   Happy Fall!

Burgundy Meets Virginia Dinner with the Wines of Maison Shaps and Michael Shaps Wineworks
Please join us for an extraordinary event on Friday, November 8th, 2019 at 7:00 PM, where France meets Virginia in the wines of Michael Shaps Wineworks and Maison Shaps. Known for his innovation and winemaking expertise, Michael Shaps has established himself at the forefront of the modern Virginia wine industry. Producing wines under the Michael Shaps label and for several prestigious wineries throughout the state–one winning the Governor’s Cup in 2017–his accolades and national recognition are beyond compare. Mr. Shaps also holds a degree in Enology and Viticulture from the Lycée Viticole de Beaune in Burgundy, and has been making wine in Burgundy since 2004. Both his French and Virginian wines are made in traditional, old-world style, with careful attention to detail but minimal intervention.

Premier Chocolate and Wine Festival  Featuring Leslie Hollander of Sugar Up, Sugar!
Please join us Sunday, November 10th 2019 at 3:00 PM for a luscious and enlightening Chocolate and Wine Tasting.Pastry Chef and Artisanal Confectioner Leslie Hollander of Sugar Up, Sugar! will be joining our head sommelier, Alex Bardsley, this afternoon to present for your pleasure, three flights of wine and truffle pairings. Sugar Up, Sugar! is a small local pastry business originating in Great Falls Virginia. Leslie Hollander is the Pastry Specialist/Owner and known for her creative flavor combinations.  Leslie creates each chocolate from scratch, made from quality ingredients and chef tested recipes. Each wine flight will consist of two wines, and each wine will be paired with two specially created truffles. (6 wines sampled and 12 unique truffles). Alex will introduce each wine, and together he and Leslie will discuss, to your delight, how the chocolate confections and the wines play off each other in an “oh so” decadent way! The tasting will be preceded by a meet and greet reception with Chef Jacques’ tasty hors  d’oeuvres and a glass of crisp Crémant d’Alsace. Holiday Celebration Wine Fest and Luncheon

A “Hat’s Off to Beaujolais” Soirée and Dinner on National Beaujolais Nouveau Day
“BEAUJOLAIS NOUVEAU EST ARRIVEE !!!! – Beaujolais Nouveau has arrived and with it the promise of a wonderful new 2019 vintage. Join Chef Jacques and team on Thursday, November 21, 2019 at 7:00 PM, and Boissett’s Export Director, Neil Ruane (aka Napoleon)  in our very first ever Beaujolais dinner and discover the region’s hidden treasures. Chef Jacques has prepared the perfect fall pairings – this experience could change your view of the gamay grape forever.  As always fun, informal and entertaining – stories, singing and above all great food and wine. All are encouraged to wear a hat in salute to the “Hat’s off to Beaujolais” Soirée.  Prizes for the best hats, included! Team Member of the Month
This month we honor Javier Chavez Portillo who joined joined L’Auberge Chez François in July of 2013. Javier started as a dishwasher and quickly moved up to one of our day time prep cooks. Part of his responsibilities include cooking delicious meals for our daily staff meals. Javier always has a smile on his face and is always ready to help with other tasks. Thank you so much Javier for the wonderful job that you do!

Greetings from Chef Jacques and Paul:

Happy Early Fall!

We’re full-speed ahead into fall and are embracing beautiful outdoor dining weather on our two terraces and wine and beer garden.

The foliage around our terraces and gardens is simply breathtaking when the rays of sun illuminate the changing, glowing leaves at sunset.

Come for a walk and a glass of wine, a meal, or one of our delightful October events!  Not to mention, fire pit weather will soon be upon us as well.  It’s my favorite time of the year!

October is Virginia Wine Month, so we have a great emphasis on, you guessed it, wine!  We have several champagne and wine dinners featuring some of our favorites from various French regions, a Virginia wine festival, and some acoustic and Jazz delights as part of our Music and Cuisine series.

Thank you for all the kind wishes myself, my brother Paul and my team received during our 65th anniversary month in September. The Haeringer family, including my papa and mama, have all been proud of the opportunity to have served thousands of our guests over the course of 65 years and will look forward to serving you at our own little slice of France at our French “auberge” in Great Falls well into the future!

Boizel Champagne Dinner Hosted by Export Director, Gabriel Faye

For the Boizel family, Champagne is more than just a story, it’s a passion: Five generations, five eras and a single tradition.  Indulge in an exquisite evening of luxurious French opulence at L’Auberge Chez François on Friday, October 4th at 7:00 PM with Chef Jacques and his team. The Garden to Table Dinner on Sunday, October 13th at 5:30 PM is a special chance for Chef Jacques to create a full menu featuring the very fresh items that come from our gardens while enjoying all the added healthful benefits.  Chef Jacques is still harvesting plenty of kale, lettuces, greens, haricots verts, cabbages, herbs and other produce from the garden. The full moon party begins with a reception, sipping North Gate Rhatsiteli and savoring seasonal canapés. We will toast the full moon’s fire, abundance, power and vitality, before sitting amid flowers and murmuring fountains to relish Chef Jacques’ garden-to-table inspired repast, from his two on-site gardens, accompanied by two more delectable wines. Those intrepid enough can join Chef Jacques in the gardens to conclude the evening by howling at the moon, the chef’s tradition to ensure an excellent harvest of vegetables and herbs throughout the season. You’ll find our garden produce proudly featured on our lunch, dinner and happy hour menus at L’Auberge Chez François and Jacques’ Brasserie. Trimbach Wine Dinner with Special Host 13th Generation Jean Trimbach

Unquestionably one of the greatest names in Alsace, the Trimbach family, based in the picturesque town of Ribeauvillé, has been involved in making wine since 1626 and has, over 13 generations, built an enviable reputation for the quality of its entire range, a benchmark for Alsatian wines. Please join us on Tuesday, October 15th, 2019 at 6:30 PM as we welcome our special guest and host, Jean Trimbach, representing the 13th generation of the Trimbach family.  We invite you to revel in the history of Papa’s Alsace, our homeland, and a beautiful wine region situated amongst the rolling hills and quaint medieval villages of northeastern France, for Chef Jacques’ and Jean Trimbach’s multi-course “dine and wine” experience, not to be missed.    The Trimbachs have a purist vision. The pianist is Len Mitchard,  bassist – Alex Petkoff and guitarist Tom Kitchen.  As jazz artists and aficionados, the Trio loves to swing.  It’s not uncommon to hear a sprinkling of Latin rhythms, or some tight BeBop phrases, but the trio always keeps it in the groove.  Round your weekend off with brunch cocktails and a delectable menu, while tapping your feet to The Tom Kitchen Tritone Jazz Trio!  Spend your musical Sunday with us!

Friday Night Music and Cuisine Dinner Series featuring the Acoustic Guitar Music of John Sweet

Please join Chef Jacques and the L’Auberge Chez François team on Friday, October 25th at 7:00 PM as we continue our popular Music and Cuisine series. This evening, we will be featuring music by John Sweet. John Sweet arranges and performs popular music from the last several decades on acoustic guitar.  From Elvis, Sinatra and the Beetles to folk, pop, country and show tunes, John is sure to please most musical palates. Instead of singing, John lets the guitar carry the melody providing a pleasant background ambience suitable for fine dining and good conversation. Team member of the Month

Mounir Belmourida joined our team in September 2015. He began working as a server -a  very quiet but friendly server who happened to be extremely tech-savvy. We can always count on him to help during power outages to get our tech systems back up and running. We slowly discovered his extensive background in private events and after bringing great new ideas to our special and private events department, he was named our Private Events Manager. Mounir always has a smile on his face and is always ready to lend a hand where needed. We thank him as he continues to ensure each  special and private event runs smoothly and leaves a memorable experience for our guests! Great job Mounir!
