Candy tastes sweet,
But a romantic repast
Is a much better treat!

might even say that they are our raison d’etre. Our philosophy is that
life’s memorable moments are not complete without a festive meal.
Many couples return to L’Auberge Chez François and Jacques’ Brasserie
year after year to renew and reaffirm the romance in their lives. We
supply the cuisine, ambience, service, and wine: you bring your own
romantic magic.

February is, of course, the month for romance. L’Auberge Chez
François is proud to be recognized as the number one romantic

To continue to share and expand these romantic experiences with you,
we’re hosting many unique “romance themed”  events
that will help you celebrate that special someone in your life. On the
menu will be Champagne and Wine(but of course), Aphrodisiacs,
Truffles, Chocolate and of course, passion itself.

Come enjoy a delicious meal and a little romance at our slice of France,
right here in Great Falls, Virginia.

Happy Valentine’s Day and Bon Appetit!
Cheers!

It’s what makes you always want to open a new bottle or a new book, to visit a new winery or region, to keep learning.  Then, understanding hospitality, how to use what you’ve learned to enhance our guests’ experience, is what makes it all work.”  We thank Alex for his many years of service!

Holiday Greetings from Chef Jacques and Paul Haeringer
Happy holidays from all of us at L’Auberge Chez François and Jacques’ Brasserie to you and
yours.  As we are now into high gear for our busiest season of the year, I am very thankful to have such an excellent team, whose hard work and dedication have allowed us to be a Washington-area institution graced with many accolades for over sixty years. Merci Beaucoup!

Many of our regular guests request a favorite server when they come in for lunch or dinner and
we’re always happy to oblige. But our guests only ever meet a fraction of the people who keep everything running in harmony during their meals. We have over ninety employees, many of whom are hard at work in the back of the
house. Behind the copper doors that lead to la cuisine, an ensemble of pot washers, line cooks, chefs, and pastry chefs staff stations around our large kitchen to ensure that the french fries at Jacques’ Brasserie are pleasingly crispy
and the lobster upstairs at L’Auberge Chez François is sauced just right. Guests may view these goings on in the kitchen through a window adjacent to the main entrance of L’Auberge Chez François. If you’d like a closer look, feel free to ask your server for a tour of the kitchen.
We have team members in the kitchen who have been with us since we opened in 1976. And, of course, we have many loyal guests who have been dining with us for just as long, if not longer! A sincere thank you to all of you for your patronage in 2018 and we hope to see you here during the holidays and in the upcoming new year.

2019 promises an exciting and expanding line up of all our special events.  We will continue to offer lively and delectable soirées showcasing fine food, wine, craft beer, live music and our
two on site-gardens (in season).  From our lively Chef Jacques’ cooking demonstrations and luncheons, to our “howling at the full moon” parties and more, be sure to join us throughout the year.

We ring in the New Year with a very special tribute to my Papa Haeringer, as we toast and
celebrate our founder, on his 100th birthday, January 6th.  Dine on the “Classics” Menu of Papa’s very favorite dishes from his beloved Alsace, as we take a trip down “memory lane”,
with a very special video presentation of Papa, “in his own words”.  January also brings a variety of musical events, including brunches, with The Nancy Scimone Duo, “The Legends” as
performed by Prince Havely; and new to our stage at L’Auberge Chez François, Washington Area Music Association’s best jazz instrumentalist, Al Williams.
You won’t want to miss, “ A Francophile Friday Night Live” featuring the music of the very talented Lynn Veronneau Duo, and a special Michael Chapoutier Rhône wine dinner.

As is my tradition each year, I leave you with my poem, “A Chef’s Christmas,” written by yours
truly.

T’was the night before Christmas, and all through the kitchen
Chefs scurried about while groaning and bitchin’.
The sauces were simmering and seasoned with care,
Because soon the reveling hordes all would be there.
The tables were set, and not a moment too soon;
Both waiters and hosts looked ready to swoon.
Will we ever be ready? It’s so hard to tell;
Our chances are as good as a snowball in hell.
The pressure was on.The geese were a-roasting,
As partiers began all their holiday toasting.
With bags full of presents, dressed in festive apparel.
Our guests made such a racket that drowned out the carols.
In the kitchen waiters shouted, while cooks swore through their teeth.
The scene was pure bedlam, not a moment of peace.

The chef, he bellowed, to the cooks on the line,
“Move your derrières, make those plates look sublime.”
“I want everything hot, let us make haste,
Move onward you cooks, there’s no time to waste.”
The chef looked about, then said with a shrug,
“To all a good supper and a hearty bah humbug!”

We wish you a Joyous Holiday season and a Prosperous, Healthy, and Happy New Year!

Jacques and Paul Haeringer and the team at L’Auberge Chez Francois

September 2018 Newsletter

Greetings from Chef Jacques
We begin the Fall season with a special toast to you, our loyal patrons, and to the staff of L’Auberge Chez François for sharing 64 years of delicious food and magical celebrations. September 15th markedthe actual day we opened our doors at the original Chez François in Washington D.C in 1954.  We are humbled to continue Papa and Mama’s vision of fine dining in the Washington Metro area, thanks to your loyal patronage.

We have also expanded these visions with new ones, including our more casual Brasserie,
expanded vegetable and herb gardens, a outdoor beer and wine seating area, and scores of special events for you, your family and friends. We’ve had a lovely season serving al fresco on the terraces and I predict a few more weeks of excellent outdoor dining (a chef’s weather predictions are always more accurate than the weatherman’s). If you haven’t yet made it out to dine on the terrace during these warmer months, there is still time for a summeresque meal outside.

In October, we have a full slate of very special events for you to enjoy.  Following a sold-out performance this past August, we are thrilled to invite you to join us for two repeat performances of “Grand Nights on Broadway” Musical Showcase Soirées.
We are also featuring a delectable Nickel and Nickel Family Estates Wine
Dinner; A “Frank Sinatra & Tony Bennett Inspired” Musical Brunch; a very special Borie-Manoux Bordeaux Wine Dinner and a musical brunch featuring the French tunes of the “oh-so” talented Lynn Veronneau Duo. October is also Virginia Wine Month and we’re celebrating with our own “Best of Virginia” Wine Festival and Luncheon- ‘Discover Your local crush’ with us!

I’m proud and humbled that our simple philosophy,” bien manger, c’est bien vivre”, has carried us through 64 years in the Washington D.C. metro area.

Merci to all our guests for your loyal patronage over the years and here’s to many more years of eating well and living well.

Please be sure to follow L’Auberge Chez François on Facebook, Twitter, and Instagram for behind the scenes photos, specials and more.

Despite a rainy summer, the expanded gardens are producing bumper crops: haricots verts; several varieties of peppers including shishito, marconi and big bell; summer squash, orange
and green zucchini; several varieties of heirloom and red beefsteak tomatoes (served
in our popular tomato salads and delectable Fresh Garden Bloody Marys). Our climbing cucumbers are also plentiful.Green and purple basil, tarragon, chives, mint, sorrel, sage, lemon verbena and shiso round out the herb section.  All vegetables and herbs are harvested and served the same day.

New this year, we are growing two varieties of hops for an October brew, in
collaboration with our friends at Lost Rhino Brewing Company.

We will begin planting fall crops including kale, kohlrabi, rutabagas, cabbage, spinach
and several types of fall lettuces in the coming weeks.

L’Auberge Chez François goes Italian: “A Taste of Italy” Wine Dinner
Please join us Thursday, September 13th, 2018 at 7:00 PM for a special wine dinner show casing the wines of Elvio Tintero from The Piemonte. In 1900 a Frenchman named Pierre Tintero set out for Piedmont. Pierre, called “Pietrin” by the locals, quickly became a vital part of the estate and fell in love with the widow, whom he married two years later. The couple continued to work the vines
together and bottled their own Dolcetto for the first time just as war fell in 1914. It was not until the 1980’s that Pierre’s grandson Elvio began experimenting with the challenging process of frizzante wine production. Now, in addition to more serious, traditional wines like Barbaresco and Arneis, the Tinteros make delightful, fresh, slightly spritzy wines from local grape varietals
that are a joy to drink. Elizabeth Van Wazer CSW of The Robins Cellars will be
on hand to present the wines, and Chef Jacques has designed a menu to showcase
both styles.
